The gods attempted to overthrow him sometime before the Trojan War, and they almost succeeded until he was freed by Briares when The other gods argued about who will replace him, and then he punished them. Im pretty sure he didn't forget that day, so he would be a little paranoid. Also, Olympos wasn't unguarded. Aeolus and the wind gods protected it from aerial assault while they left the job of guarding the entrance of Olympos to the demigods and the hunters. I am pretty sure that he didn't think it would take a trek across the whole country before defeating Typhon because, originally, he alone defeated Typhon after Athena convinced him to stay and fight. So, the mistakes he made was probably due to underestimating Kronos' forces. Now, the law forbiding gods from interfering is probably to keep the things that happened in the ancient days, like Aphrodite causing the Trojan War and other things like that, from happening again. A recent reminder of godly interfering would be that every war was started by a child of Athena, convinced by there mother, trying to get back at the Romans for stealing the Athena Parthenos. So, most of his mistakes are due to paranoia, fear of godly interference causing wars, or underestimating his opponents.
