How do the NHL pros sharpen their skates?
It's not easy to find information regarding the players' own skate preferences, but there is some information out there. Most info are a few years old information, but it does not matter so much as you as a professional very rarely or rather never change your hollow depth as they are very used to what they have used for many years.

Alex Ovechkin - 1/2 ″ - 13 mm
Wayne Gretzky - 1/2 "- 13 mm
Joe Sakic - 5/8 ″ - 16 mm
Paul Coffey - 1 to 2 ″ - 25 mm +
