It really is, as everyone has said, a shortened version of Ernest the fastest milkman in the West

You can call anyone whatever nickname you want, from Titch to Smelly, to Sugar tit*, or Buttercup. It doesn't have to be anything to do with their name. Nicknames often come from a child's actions, or personality, or a misunderstanding or mispronunciation when they were little.

If you are asking what Ernie is shortened from, then it is Ernest.
