Mustard is one of nature’s great emulsifiers, meaning that it helps join together water and oil in one seamless blend. This means that you can use it to make sauces, dressings and seasonings that bring together lots of different flavors into one delicious package. I kid you not, this is one of the most amazing discoveries of my life – rubbing your BBQ with mustard before seasoning the meat turns your flavor up to 11. Whether you are smoking a brisket, ribs or a pork shoulder, rubbing the meat with plain old yellow mustard, then seasoning it with your favorite dry rub does two wonderful things. First, it will help the seasoning adhere to the meat more evenly and not fall off while smoking. Second, the mustard helps develop a smoky and delightful “bark” of flavor on the outside of your meat.
